Every iPhone since XS. Every Pixel since 3. Most Samsung Galaxy flagships since S20. If your phone is from 2020 or later, it almost certainly works.

Can I keep my regular number?

Yes. Your existing SIM stays active. The eSIM sits alongside it as a second line, just for data.
